Corn Soup
Ingredients
- chicken breast (and/or crab meat)
- cornstarch
- soy sauce
- sherry
- can of chicken broth
- ginger
- green onions
- big can creamed corn
- a couple eggs
- sesame oil
Method
- Slice chicken thin, against the grain. Marinate in cornstarch, soy sauce, sherry.
- Heat chicken broth in pot with ginger, green onions, sherry.
- Pureé creamed corn.
- Strain broth.
- Add chicken and/or crab. Chicken will cook quickly.
- Add corn, flavoring—soy sauce, sherry. Simmer.
- Beat eggs and spiral in.
- Finish with sesame oil, green onions.
