Method

  1. Slice chicken thin, against the grain. Marinate in cornstarch, soy sauce, sherry.
  2. Heat chicken broth in pot with ginger, green onions, sherry.
  3. Pureé creamed corn.
  4. Strain broth.
  5. Add chicken and/or crab. Chicken will cook quickly.
  6. Add corn, flavoring—soy sauce, sherry. Simmer.
  7. Beat eggs and spiral in.
  8. Finish with sesame oil, green onions.
