Matt's Trademark Lentil Soup

Ingredients

Method:

  1. Soak lentils for 20 minutes in a soup pot with about 5 cups water.
  2. Bring to a boil. Lower heat. Simmer 20 to 30 minutes.
  3. Add celery, onions, a pinch of salt, a handful of cumin, a pinch or two of cayenne, and a pinch or two of crushed corianter seed.
  4. Simmer 20 minutes more (or so).
  5. Add garlic, vinegar, olive oil, lemon juice.
  6. Simmer a few minutes more. Finish with red pepper flakes and more cumin seeds. Eat alone or with wheat bread.
