Matt's Trademark Lentil Soup
Ingredients
- 1 lb dry lentils (brown or green)
- 1 head of celery, chopped
- 2 onions, chopped
- A couple handfuls of whole cumin seeds
- A couple pinches of cayenne pepper
- A couple pinches of crushed coriander seed
- 5 to 10 cloves of garlic
- A splash of vinegar (sherry, cider, red wine, or etc)
- A pour of olive oil
- The juice of 1 lemon
- A couple pinches of red pepper flakes
Method:
- Soak lentils for 20 minutes in a soup pot with about 5 cups water.
- Bring to a boil. Lower heat. Simmer 20 to 30 minutes.
- Add celery, onions, a pinch of salt, a handful of cumin, a pinch or two of cayenne, and a pinch or two of crushed corianter seed.
- Simmer 20 minutes more (or so).
- Add garlic, vinegar, olive oil, lemon juice.
- Simmer a few minutes more. Finish with red pepper flakes and more cumin seeds. Eat alone or with wheat bread.
