Tabbouleh
Ingredients:
- 1/2 c bulgur, medium-grind
- 3 bunches parsley, minced
- 2 large tomatoes, seeded and diced
- 1 medium cucumber, seeded and diced
- 2 green onions, finely sliced crosswise
- 1/4 c olive oil
- Salt
Method:
- Bring 1c water to boil in a small saucepan. Add bulgur. Put a lid on the pan and remove from heat. Let sit until all the water is absorbed.
- Combine all ingredients and mix.
