Manakish Za'atar
Ingredients
- 300ml tepid water
- 8g instant yeast
- Heaping Tbs honey
- 500g all purpose flour
- Pinch salt
- Olive oil (to fry)
- Za'atar
Method
- Combine yeast, honey, and water; whisk until frothy.
- Mix in flour and knead 2–3 minutes. Add salt and continue kneading.
- Cover firm dough. It should stick to itself rather than the bowl. Let rise at room temp for 30 minutes.
- Roll into 8 balls and let sit for 10 minutes.
- Flatten each ball and add dimples with your fingers. Make them pretty flat because they will rise while frying.
- Fry on pan (or griddle) with olive oil.
- Mix an equal amount of olive oil and za'atar to create a paste. Put a thick layer on top of the flat bread after flipping.
- Serve hot or room temperature, by itself or with labne.

Note
Could do the bread without the za'atar and eat it with hummus, beans, curry, etc. In that case, sprinkle some salt on before frying.
